Once the mixture is smooth and aerated, we transfer it to a large tray – per tradition, containing a sheet of rice paper. A second sheet of rice paper is placed on top of the finished product, which is then cooled and cut into 50-gram bars.

To make our nut brittles, we chop fresh nuts, drench them in buttery caramel and allow the mixture to set. Then we break the brittle into pieces by hand.
