Once the mixture is smooth and aerated, we transfer it to a large tray – per tradition, containing a sheet of rice paper. A second sheet of rice paper is placed on top of the finished product, which is then cooled and cut into 50-gram bars.

To make our nut brittles, we chop dry-roasted nuts, drench them in buttery caramel and allow the mixture to set. Then we break the brittle into pieces by hand.
