Fruity Chutney Chicken dish

Mix 180 ml good quality fruit chutney, 200 ml strong Rooibos tea and 2,5 ml (½ tsp) mild curry powder. Place 16 chicken drumsticks in a large oven dish. Add 7-8 Cecilia’s Farm Colourburst™ Nectarines, cut into strips; 12-15 Cecilia’s Farm Pineapple Chunks; 12 Royal Apricots, halved and 5 Cecilia’s Farm Mango strips, cut into chunks. Stir in the chutney mixture and mix well. Roast at 180 °C for 30 minutes or until golden brown and cooked. Sprinkle with Cecilia’s Farm Maple & Coconut Cashews and Italian parsley. Serve with blanched green veggies as a yummy, comforting meal.
