Add a little pizzazz to your pork fillets – a great combination of almonds, apricots and herbs to lift your meal and make everyone around your table feel special.
Mix 50 g chopped flaked almonds; 100 g chopped Cecilia’s Farm Turkish Apricots; 30 ml olive oil; 50 ml each chopped fresh rosemary and sage and season. Slit open the sides of 2 pork fillets, stuff and secure with toothpicks. Fill a few extra whole Turkish apricots with any leftover stuffing. Pan-fry fillets and extra apricots to your preference and enjoy as a special meal.
