Pack a delicious meal-in-one as a romantic picnic for two. Cut half of the cherries from an 80 g bag of Cecilia’s Farm Dried Cherries, in half – keep the rest whole. Mix with 10 ml (2 tsp) each finely grated lemon rind, fresh thyme leaves, chopped parsley and 30 ml (2 tbsp) olive oil. Season to taste and stir two-thirds of this mixture into 250 ml (1 cup) prepared couscous. Layer in glass jars with lettuce, cubes of cucumber, Cecilia’s Farm Roasted & Salted Mixed Nuts and cooked, sliced chicken. Top with more of the cherry mixture and garnish with lemon rind and micro herbs.
